In the UK, do not write penalty rates as a local legal default. There is no statutory overtime premium. Any enhanced rate for nights, weekends, or bank holidays is a contract, policy, or collective-agreement question, sometimes called an unsocial-hours payment. Average pay must still meet the National Minimum Wage or National Living Wage.
